Kolang Kaling is small to medium in size, averaging 5-7 centimeters in diameter, and has a slightly lopsided, globose to oval shape. The outer shell is smooth, firm, and hard, transforming from green to yellow-black when mature and bearing brown-black spots and discoloration at all stages of maturity. Underneath the thick shell, three translucent-white seeds are chewy and soft, encased in a fibrous interior. The fleshy seeds can be easily removed, and Kolang Kaling has a rubbery texture with a mild, neutral flavor.

Kolang Kaling, botanically classified as Arenga pinnata, are fruits that grow on a tropical palm that can reach up to twenty meters in height and belongs to the Arecaceae family. The Arenga pinnata palm is highly cultivated for its sap, fruit, bark, and leaves, and is found along river banks and forests in Southeast Asia. Also known as Buah Tap in Indonesia and Kaong in the Philippines, Kolang Kaling is favored for its neutral flavor and is popularly consumed as a chewy snack soaked in syrup or consumed as a topping on dessert.

Kolang Kaling contains some vitamin C, manganese, phosphorus, fiber, potassium, iron, and calcium.

Applications
Kolang Kaling is best suited for cooked preparations such as boiling, and the immature fruits are the preferred state for consumption. The fruit is removed from the outer, fibrous shell and then boiled to create a soft and chewy texture. It can also be cooked in syrup or flavored sodas to add sweetness and coloring. In the Philippines, Koland Kaling is flavored with red and green syrups to create a colorful fruit salad that is traditionally served at holiday meals. The fruit is also served as a topping on haluhalo, also known as halo-halo, which is a crushed ice dessert mixed with evaporated milk and topped with fruits, red beans, ube, grass jelly, and ice cream. During Ramadan, the fruits are found in kolak, which is a banana compote that is used to break fasts. In addition to using the fruits whole, Kolang Kaling can be cooked into jams or preserved in syrup for extended use. Fresh Kolang Kaling should be immediately consumed for best flavor, but the preserved, canned versions will keep for a couple of months when stored in the refrigerator.

Kolang Kaling is native to the tropical regions of Southeast Asia and has been growing wild since ancient times. Today the palm is also found in select areas in Asia, and the fruit is cultivated on a large scale for resale in local markets in Indonesia, the Philippines, Malaysia, Hawaii, India, Thailand, and China.

Palm oil is derived from the flesh of the fruit of the oil palm species E. Guineensis. In its virgin form, the oil is bright orange - red due to the high content of carotene.

Palmoil is semi - solid at room temperature; a characteristic brought about by its approx. 50 percent saturation level. Palm oil (and its products) has good resistance to oxidation and heat at prolonged elevated temperatures; hence, making palm oil an ideal ingredient in frying oilblends. Manufacturers and end - users around the world incorporate high percentages of palm oil in their frying oil blends for both performance and economic reasons.

In fact, in many instances, palm oil has been used as 100 percent replacement for traditional hydrogenated seed oils such as soybean oil and canola. Products fried in palm oil include potato chips, frenchfries, doughnuts, ramen noodles and nuts.

The oil palm produces two types of oils; crude palm oil (CPO) from the fibrous mesocarp and crude palm kernel oil (CPKO) from the kernels. Although both oils originate from the same fruit, palm oil is chemically and nutritionally different from palm kernel oil. It is one of the only two mesocarp oils available commercially, the other being olive oil.

In conventional milling process, the FFB's are steriliszed and the fruitlets stripped off. The loose fruitlets are then digested and pressed to extract the CPO. The kernels are separated from the fibrous mesocarp in the press cake and later cracked to obtained CPKO.


CHEMICAL COMPOSITION OF PALM OILS:

Crude Palm Oil is the richest natural source of Tocotrienols. The Malaysian Palm Oil Board (MPOB) has developed a special patented technology for extraction. The latest technology to purify Tocotrienols from the fruits of oil palm (Elais guineensis) was developed to produce a superior quality and purity.

Palm oil, being a vegetable oils, is cholesterol - free. Having a naturally semi solid characteristic at room temperature with a specific origin melting point between 33'C to 39'C, it does not require hydrogenation for use as a food an ingredient.

CPO is deep orange red in colour due to the high content of natural carotenes. Palm oil is rich source of carotenoids and vitamin E which confers natural stability against oxidative deterioration.

Fractionation separates oil into liquid and solid fractions. Palm oil can be fractionated into liquid (olein) and solid (stearin) components.

Palm oil has a balanced ratio of unsaturated and saturated fatty acids. It contains 40% oleic acid (monounsaturated fatty acid), 10% linoleic acid (polyunsaturated fatty acid ), 45% palmitic acid and 5% stearic acid (saturated fatty acid). This composition results in an edible oil that is suitable for use in a variety of food applications.

Annatto, sometimes called roucou or achiote, is derived from the seeds of the achiote trees of tropical and subtropical regions around the world. The seeds are sourced to produce a carotenoid-based yellow to orange food coloring and flavor.

Annatto is commonly used in Latin American and Caribbean cuisines as both a coloring and flavoring agent. Central and South American natives use the seeds to make body paint and lipstick. Deliciously tangy and one of the most highly prized natural foods in South Asia, the tamarind – the melodic name of which comes from the Persian "tamar-I-hind," meaning "date of India" – is gaining recognition and appreciation throughout the world. Said to be native to Africa, this exotic fruit grows on exceptionally tall trees of the fabaceae family, such as peas, beans, and other legumes, mostly in the warmer, dryer areas of Asia, Mexico, and India.
Tamarind trees produce an abundance of long, curved, brown pods filled with small brown seeds, surrounded by a sticky pulp that dehydrates naturally to a sticky paste. The pods look a bit like huge, brown, overly mature green beans.

After harvest, tamarinds are sometimes shelled in preparation for export. From there, they're often pressed into balls and layered with sugary water or syrup; sometimes they're salted.
