Also known as Swedish turnip or yellow turnip, rutabaga is one of our personal favourites. Almost radish-like in texture and bite, and divinely crunchy. A stirfry is incomplete without rutabaga! We think the secret is in the crunch and the mild flavours that blend so well with just about anything. Can also be boiled with carrot and mashed, or boiled and mashed with butter. The greens are also delicious and can be cooked similarly to kale.

Rutabaga is a cool-weather crop that is best planted in late summer for an autumn harvest, or in autumn for a winter harvest in milder winter climates. If planted in spring, they tend to bolt as soon as the daytime temperatures increase.

Puffball mushrooms range from small to very large in size, averaging 10-70 centimeters in diameter, and are round, oblong, to oval in shape. Some species are small, golf-ball sized, while others can grow as large as soccer balls. The white fruiting body can be smooth or bear some small scales, warts, or spines and is firm, airy, and spongy. There is also a protective coating that helps keep debris and dirt from entering the flesh. When sliced, the flesh should be pure white and never have any color. Puffball mushrooms are white when young and transition to a yellow-brown when mature and are rendered inedible when they reach this state. There are little to non-existent stems, and the spores are produced internally in the fruiting body. When young, Puffball mushrooms have a mild, nutty, and earthy flavor. Puffball mushrooms contain some phosphorus, manganese, selenium, and clavacin.

USES
Puffball mushrooms are best suited for cooked applications such as sauteing, pan-frying, and baking. Referred to as the �¢??breakfast mushroom" Puffball mushrooms pair well with egg dishes and are enhanced when sauteing and browned in simple ingredients such as garlic and butter. They can be sliced thinly and rolled with meat and vegetables, chopped into stir-fries, or grilled with marinades. They can also be cut into slices, battered, and fried, sliced and used as noodles in lasagna or ravioli, used as the dough in pizza, chopped into croquettes, blended into hummus, pureed into gravies, or dried and ground into a powder to use as a flavoring agent. The rotund mushrooms can be substituted for tofu or eggplant in many recipes. The flesh readily absorbs accompanying flavors so oil should be used sparingly. Puffball mushrooms pair well with tomatoes, broccoli, beets, rutabagas, radishes, turnips, parmesan cheese, garlic, poultry, scallops, crab meat, and tuna. There are many health benefits related to adding pickled vegetables to one's diet. Ancient Egyptians loved pickles and Cleopatra claimed that pickles helped her maintain her beauty. It increases your metabolism, brine pickles are calorie free, they are ideal for low carb snacking and good for the digestive system.

Our fermented and processed pickles are prepared with cold, salted brine for up to three months so that the bitter compound is removed, the vegetables are softened and imbued in flavor. It is then washed and sorted and packaged in containers in a brine solution for its preservation.

The harvesting process plays a key role in our pickle produce. Our farmers select the finest olives and vegetables. Each olive is selected according to ripeness before the fermentation process commences.

For the preservation process, our vegetables and olives are transferred to large tanks that are filled with a brine solution, which is made up of water and 10% salt. It takes up to three months for the fermentation process to be completed. This process is necessary to break down the sugar in the vegetables, and to produce the carbon dioxide so that the pickled vegetables can be stored for many months after packaging. Once the fermentation process is complete, the vegetables and olives are removed from the brine and

immersed in water to remove all the salt. At this stage any slicing and selecting takes place. The vegetables and olives are then packaged with a liquor consisting of brine and labelled for shipment.
