Oilseed Crops are grown primarily for the oil contained in the seeds. The oil content of small grains (eg, wheat) is only 1-2%; that of oilseeds ranges from about 20% for soybeans to over 40% for sunflowers and rapeseed (canola). The major world sources of edible seed oils are soybeans, sunflowers, rapeseed, cotton and peanuts. Seed oils from flax (linseed) and castor beans are used for industrial purposes. Edible fats and oils are similar in molecular structure; however, fats are solid at room temperature, while oils are liquid.

The major oilseeds grown in Canada are soybeans, sunflowers, canola and flax. In addition, experimental production of peanuts on a commercial scale began in 1981 in southwestern Ontario. Plant breeding experiments are underway at the Agriculture Canada Research station, Saskatoon, Saskatchewan, to develop an edible oil from mustard seed and a usable animal feed from the residue. The program involves reducing the content of 2 harmful substances, erucic acid and glucosinolate, which were formerly a problem in rapeseed oil.

DESCRIPTION
New hybrids of the traditional sunflower species produce an oil unusually high in oleic acid (C18:1). The appearance of this new hybrid only differs in the color of the kernel shells from off white to silver gray compared to black resp. black stripes. The seed is pressed and then extracted. The subsequent 4 step refining (deacidification, bleaching, steam deodorization, and winterization) results in a very light transparent refined high oleic sunflower seed oil with excellent oxidative stability.

USAGE:
The excellent stability to oxidation is comparable to that of a good olive oil and approximately twice as high as with traditional sunflower oil and soybean oils. It is therefore, particularly suited as a fat component and carrier for pharmaceutical and cosmetic formulations. Its usage in food: in baker's ware and pastries (un-hydrogenated spray oil), baby food and margarines, as a baking and frying oil (high smoke point). Like olive oil, high oleic sunflower seed oil is believed to favorably influence the human cholesterol metabolism due to its high content of monounsaturated oleic acid (C18:1).
