Kopi Luwak is an exotic arabica coffee produced from coffee cherries partially digested by the Asian palm civet (Paradoxurus hermaphroditus). They live in the woods around the mountain plantation and consume coffee cherries for dessert. They are capable to distinguish the right coffee cherries with ideal ripeness. Cherries ferment in the intestines of a civet and are collected along after being defecated. The fermentation that occurs in the civet's digestive tract affects the flavour of the coffee. A coffee bean is a seed of the Coffea plant and the source for coffee. It is the pit inside the red or purple fruit often referred to as a cherry. Just like ordinary cherries, the coffee fruit is also a so-called stone fruit. Even though the coffee beans are not technically beans, they are referred to as such because of their resemblance to true beans. The fruits â?? coffee cherries or coffee berries â?? most commonly contain two stones with their flat sides together. A small percentage of cherries contain a single seed, instead of the usual two. This is called a "peaberry". The peaberry occurs only between 10 and 15% of the time, and it is a fairly common (yet scientifically unproven) belief that they have more flavour than normal coffee beans. Like Brazil nuts (a seed) and white rice, coffee beans consist mostly of endosperm.

Pink Bourbon
Pink Bourbon is a rare and coveted find. A hybrid of Red and Yellow Bourbon, this varietal stands out in every wayfrom the striking pink color of its ripe coffee cherries to the sweetly complex flavor of its beans. Even in ideal growing conditions, Pink Bourbon is challenging to cultivate. In addition to meticulous plant maintenance, farmers must isolate their crops to encourage successful cross-pollination and the ongoing production of pink fruit. Harvesting also requires extra diligence: coffee pickers look for subtle color nuances that separate underripe cherries from mature ones. Given all the variables that need to align, this lot seems almost miraculous. Elegant and balanced with sweet floral tones. A truly breathtaking cup profile.

Minang Arabica Green Coffee Bean (Specialty, Natural Process) is coffee originating from the province of West Sumatra, Indonesia. The province of West Sumatra is crossed by the equator and has a landscape of hills and mountains which are among the highest in Indonesia. This condition resulted in West Sumatra or better known as the Minangkabau area, to be very fertile for agriculture, especially coffee. The plateau, with an altitude between 1400-1500 Masl, is ideal for growing coffee, especially Arabica coffee. The sunshine that shines on most of the day and coupled with fertile soil, causes coffee to grow well in this area, so the coffee produced is very different compared to other regions in Indonesia. The resulting coffee can be roasted very well from medium to dark roasts. The roasting results are very earthy and very suitable to accompany you while working and relaxing. For those of you coffee lovers, it's time to try coffee from this area, and feel earthy coffee taste sensation.

This is the most traditional process method. In the natural or dry process, whole coffee cherries are left to dry in the sun, leaving the fruit on the bean, allowing it to raisin-ify around the bean. Natural fermentation occurs resulting in the creation of complex flavors and sugars.
