Our Wild Thyme Honey comes from a single species of thyme that grows wild in a small area of the rugged and remote Central Otago Mountains located in the South Island of New Zealand. Introduced to the country during the gold rush of the 1800’s by Chinese miners, every October and November the side of the mountains are a mass of vivid purple thyme flowers and the air is filled with the amazing fragrance given off by this herb. This is the time of year when our bees produce Wild Thyme Honey.

HoneydewHoney, In contrast to most other honeys, Honeydew Honey is not a floral, honey. Instead it is the product of two insect types working to create a, delicious and unique honey. Small scale-insects inhabit our beech, forests and produce a sticky liquid which is collected by honeybees, foraging in remote native Black Beech forests in the South Island of, New Zealand., Honeydew Honey contains complex sugars called Oligosaccharides, which research shows may support and strengthen good intestinal, bacteria and digestive functions. These Oligosaccharides may be, especially beneficial to people suffering from colitis or those taking, antibiotics which are renowned for killing all the good bacteria in the, intestinal tract. Honeydew Honey also contains higher levels of, antioxidants comparedto other floral honeys., Nelson Honey’s Honeydew is dark in colour, with a similar taste to, golden syrup or treacle. This runny honey does not crystallise in cooler, temperatures and is delicious with plain yoghurt,

This Honey is usually produced by bees/aphid that collects nectar from trees, both conifers and deciduous and not from blossoms. It is also referred to as Honeydew.
Forest honey is produced by bees from oak, holm oak and cork oat forests. Actually it is considered honeydew. since it is not made with the nectar of flowers but from sugary solutions that bees collect from the leaves of the trees.
for this reason, bees continue to make honey when most of the flowers have bloomed, that is, until late August or early fall. Characterisitics of forest honey. Generally, honey has a dark amber color, although depending on the variety of honeydew, its color may change, likewise, its flavor is strong, a little sweet and with salty notes, so it is less sweet than other varieties of honey. on the other hand, regarding the aroma of forest honey, it is characterized by being floral, malty and very intense.
