Taste & Aroma: Similar perfume to ginger or to cardamon. It is akin to pepper, but more aromatic, spicy as chilies and cardamon, but less zesty and less acidulous.
Composition: Composed of tannins, of mineral salts, of proteins and phenolic ketones acetates, giving its spicy flavour.
