Currently, 100% of coffee production on the island of Java occurs on small plantations with an average size of almost 3 hectares. Our commercial-grade Javanese coffee comes from villages in Central Java, Indonesia, where the beans are hand-picked. To produce the best quality coffee, we still use natural and traditional processes. Natural coffee processing itself is actually a traditional processing method that involves drying in the sun. Currently, the natural process is not widely practiced because it requires a longer processing time, up to 2 months from cherry picking to packaging the green coffee beans. Our coffee has a rich flavor, like other premium coffees, but Javanese coffee can be quite strong. Although low in acidity, the flavor is complex and intense, and the chocolate sweetness often has earthy undertones.
