Parboiling is a process applied to rice to preserve some of the nutrients contained in the outer grain layers, which are normally lost during polishing (the bran and aleurone layers). After a short hot steam treatment part of the nutrients diffuse into the starchy endosperm, thus enhancing the nutritive qualities of the rice. The treatment results in rice that is slightly yellow, hence some parboiled rices carry the name "Golden Rice", which must not be confused with the one produced by genetic modification
Red rice is a long, grainy rice variety which gets its reddish tinge from the presence of anthocyanin. It is rich in iron and vitamins, which together help in the production of RBC (red blood corpuscles). The antioxidants in the rice may help in fighting free radicals, which protect our skin from premature ageing.
BENEFITS: Good for bone health, rich source of fiber, helps in fighting asthma, heals impotency, improve muscle and nerve health, promotes weight loss and improves skin health.
Ambemohar, short-grain rice cultivated in Western Ghats of Maharashtra. The rice has a strong aroma reminiscent of mango blossoms. It is rich in Vitamin B, Vitamin D, Iron, Calcium, and Magnesium. It is a source of plant-based proteins. The strong mangoish aroma makes it a little sweet to taste.
BENEFITS: Reduces cholesterol, helps in regulating and lowering blood pressure, good for digestion, high soluble fibre, low sodium, contains good natural oils and low glycemic index.
Organic Red Poha is made by first par-boiling the red rice and pounding it to remove husk and flattening it. Then the beaten rice is left to dry in the sun. Red poha is a little coarse in texture, while the taste is quite easy to like. This poha is also a rich source of iron and hence pregnant women are advised to include this in their regular diets.
BENEFITS: Rich in fibre and antioxidants, packed with essential minerals iron, zinc and potassium, helpful in lowering cholesterol and regulate blood sugar levels.
