Sugar Esters E473, CAS No.37318-31-3 , commonly known as Sucrose esters of fatty acids, manufacturing process by esterifying sucrose with fatty acids. By varying the degree of esterification of the sucrose molecule it is possible to obtain emulsifiers with HLB values ranging from 1 up to 16. It is a light yellow powder, a non-ionic surfactant and is used as an emulsifier in dairy products, baked goods, soft drinks, jelly, cake and candy.
