About the product" We travel to farms all over Vietnam and purchase carefully selected cocoa beans from Ba Ria Vung Tau and Ben Tre. These cacao beans are purchased directly from farms through fair trade, and imported and sold directly to Japan without intermediaries. "About purchasing" I believe that the factors that affect the flavor of cacao beans are variety, soil, weather, cultivation method, fermentation and drying, storage and transportation, but the most important of these is the fermentation process. It can be said to be the most important factor that determines the aroma and flavor of chocolate and cocoa.

For the little History knowledge, Forastero Cocoa was introduce in Madagascar in the east of the Island in the early 1800's from Reunion Island which cross breeds with with the Crillio to produce Trinitario Cocoa of Madagascar.
In the Island, the unique rainforest, soil and climate environment has allowed the cocoa's to speciate and develop their own unique fruity flavor profiles.
Madagascar cocoa do not need to be chemically manipulate to enhance or even add flavor to produce one of the tastier chocolate in the world.
Cocoa being a cash crop and critical export for different producing countries act as a key import for consuming countries, where there is no suitable climate for cocoa production. Being a major part of a global supply chain, cocoa beans undergo a complex production process including buyers, shipping organizations, farmers, processors, manufacturers and distributors. Cultivation of cocoa is indeed a delicate process because the Cocoa trees are susceptible to changing weather, diseases, and insects that may harm the growth of the plant.

Trinitario cocoa beans are a hybrid between Criollo and Forastero and originated in Trinidad.
Trinitario beans have a spicy, earthy and fruity flavour profile. Today Trinitario beans can be found across in Venezuela, Ecuador, Cameroon, Samoa, Sri Lanka, Java (indonesia) and Papua New Guinea.
Trinitario is the predominant fine flavour cocoa and is the most likely bean to be found in highquality dark chocolate.
