There are numerous varieties of hops, classified into two main groups â?? bittering hops and aroma hops. Hop varieties differ in their chemical compositions, including tannins, beta acids, alpha acids, and the quantity of essential oils. Hops play a crucial role in achieving high-quality beer; for example, tannins enhance the drink's freshness, while acids contribute to its flavor brightness. There are also versatile hop varieties that combine aroma and a balanced bitter taste. Bittering hops have higher resin content and lower aromatic compounds, with alpha acid content around 10-15%. Aromatic hops, on the other hand, have lower resin and increased essential oil content, with alpha acids much lower â?? around 5%.
Hops can be whole or pelletized, with minimal processing for the former (properly dried and stored in specific conditions) and pelletized for the latter (initially dried, ground into powder, and then compressed into pellets). To extract maximum bitterness during brewing, and for ease of use, it is preferable to acquire pelletized hops. Pelletized hops are easier to measure, have lower wastage, and can be stored for an extended period under proper conditions (between 0�°C and -20�°C). Once opened, it's recommended to use pelletized hops within a few days to prevent the breakdown of bitter acids and essential oils due to oxygen exposure.
