Cod (lat. Gadus morhua) â?? bottom fish that feeds on invertebrates and fish. It grows up to 130 cm long and can weigh up to 35 kg. The body is spindly, the head is large, and the mouth is deep. A long mustache on the lower cheek. The body is greenish-gray or greenish-brown, mottled with brown spots. The scales are small. Lateral line gray, light, raised in front. Goes by the name Tomato Hind thanks to its colour the Red Ref cod has a pointed snout and a concave profile. Usually, the colour of this fish ranges from orange-red to orange-brown and it may even have spots all over its body. In certain areas, the colour of the fish may be different than the other. In the Indian Ocean, its body is reddish brown while in the Pacific Ocean its colour may be yellowish brown with spots on the head.

You would find them living around coastal areas and reefs where hunting of crustaceans is quite easy for them. The maximum the Red Ref cod can grow is around 22 inches in length. A pretty widespread species the Red Ref cod is majorly liked by humans. People often catch it using bait, hooks and traps. Often the Tomato Hind can be found trading fresh in live markets in Hong Kong.

This depends on the cut and firmness of the stockfish, the flesh can either be boiled for a short while with the beef or it can be added to the soup/ stew early so it can soften before the soup is fully ready.

In case of other cuts like the whole cod, osan and cut cut, you can either

boil in water for 20 minutes , then leave to soak in the water for a few hours
Boil with a pressure pot
Soak in cold water overnight
