Copra We make high-quality copra by drying fresh coconut meat (kernel) in hybrid solar dryers. With efficient and continuous drying technology, we can reduce the moisture content of fresh coconut kernels from around 50% to lower than 6% within 48 hours. This result can be achieved by utilizing solar energy during daylight and renewable energy from smokeless biomass burning all night long. Dry coconuts are just that; dry. The milk within the coconut hardens as it matures and becomes the copra, or meat, of the coconut. After a coconut is first cracked the moisture content of the meat is roughly 50 percent and it contains around 30-40% oil. After being dried by heat or the sun, the moisture content dips down to 4 or 5% and the oil content jumps to 36-70%. The resulting Dry coconut is off-white to white in color with a mild coconut flavor.

Two types of copra, namely the milling and the edible, are made in India. The milling copra is used to extract oil while the edible copra is consumed as a dry fruit. Edible copra is made in the forms of balls and cups. Copra contains the highest percentage of oil compared to other oil seeds. It contains 15-20 percent carbohydrates, 9 percent protein and 4.10 percent crude fi bre besides 65-68 percent fat. The carbohydrate fraction consists of a large percentage of cellulose and sucrose together with other sugars. Besides glucose and fructose the presence of galactose, raffi nose and pentoses is also reported.
