Carmine is red to dark red uniform granules or powder, odorless. It has good light resistance and acid resistance, strong heat resistance (105C), poor reduction resistance; poor bacterial resistance. It is soluble in water, and the aqueous solution is red; it is soluble in glycerin, slightly soluble in alcohol, and insoluble in oils and fats; the maximum absorption wavelength is 508nmÃ?Â±2nm. It is stable to citric acid and tartaric acid; it turns brown when exposed to alkali. The coloring properties are similar to amaranth.
Carmine appears to be a red to dark red powder. It is easily soluble in water and glycerin, difficult to dissolve in ethanol, and insoluble in oils.

Function:

1. Cochineal Carmine is an excellent natural food red pigment. It shows bright purplish red in weak acid or neutral environment, but its color changes under alkaline conditions. The maximum absorption of pigment solution at the pH value of 5.7 occurred at 494 nm.

2. The pigment had good storage stability and thermal stability, but poor light stability. After 24 hours of direct sunlight, the pigment retention rate was only 18.4%. In addition, the pigment has weak oxidation resistance and is greatly affected by metal ion Fe3 +. But the reducing substance can protect the color of pigment.

3. Cochineal Carmine is stable to most food additives and has a wide range of application.

Amaranth, FD&C Red No. 2, E123, C.I. Food Red 9, Acid Red 27, Azorubin S, or C.I. 16185 is a modified red azo dye used as a food dye and to color cosmetics. The name was taken from amaranth grain, a plant distinguished by its red color and edible protein-rich seeds.
Amaranth is an anionic dye. It can be applied to natural and synthetic fibers, leather, paper, and phenol-formaldehyde resins. As a food additive, it has E number E123. Amaranth usually comes as a trisodium salt. It has the appearance of reddish-brown, dark red to purple water-soluble powder that decomposes at 120 Ã?Â°C without melting. Its water solution has an absorption maximum of about 520 nm. Like all azo dyes, Amaranth was, during the middle of the 20th century, made from coal tar; modern synthetics are more likely to be made from petroleum byproducts.
