It helps to improve stability during freezing - thawing, improve water holding capacity. It also acts as texturizer for various foods. In Baking and Confectionery: FroSin-TS-CWS-E1420 can be used as a stabilizer, thickener, binder, emulsifier in ice cream, cakes, and dumplings.
