Properties: White flaky crystal or crystalline powder. Has special smell. Slight sweet taste. Melting point: 281 degree C(decompound). 10% aqueous solution's pH value is 5.6-6.1. No optical rotation, stable to heat and air. Unstable to strong acid, can cause the demethylation. Soluble in water(3.3G/100ml, 25degree C), diluted acid and diluted alkali solution. Very hard to dissolve in ethanol, almost does not dissolve in ether.

Methionine is a sulfur-containing amino acid that is butyric acid bearing an amino substituent at position 2 and a methylthio substituent at position 4. It has a role as an Escherichia coli metabolite, a Saccharomyces cerevisiae metabolite, a plant metabolite, a Daphnia magna metabolite and an algal metabolite. It is an alpha-amino acid and a sulfur-containing amino acid. It derives from a butyric acid. It is a conjugate base of a methioninium. It is a conjugate acid of a methioninate. It is a tautomer of a methionine zwitterion.

DL-Methionine is stable to air and heat, and unstable to strong acid, soluble in dilute acid and diluted alkaline, insoluble in ethanol, and hardly soluble in ether. DL-Methionine can also cause de—methylation.
