Polydextrose is a kind of polymer consisting of glucose in edible group, a small amount of sorbitol and citric acid. It is white powder or granule. It has no special taste and is soluble in water. It is convenient to be added into the processing of various foods as food ingredients. Polydextrose is soluble in water, but insoluble in ethanol and partially soluble in propylene glycol or glycerol; it has stability that can keep stable for more than 90 days at the temperature of 25,45,60 degrees; it has viscosity, which increases with the increase of concentration when the temperature is at 25 degrees; it has wettability, which can ensure that food is neither dehydrated nor dehydrated; it has melting property, and it can keep stable for more than 90 days at the temperature of 25,45,or 60 degrees. When it melts above 130 degrees Celsius, it forms a transparent glassy substance after cooling, but does not form crystals.
