Rewarewa Honey is produced from a New Zealand native Honeysuckle tree. This smooth, malty but caramel-like honey is rich and full bodied. Found at the top of the South Island and throughout the North Island with an intricate red flower which bees collect its nectar.It has a beautiful deep red amber colour. Flavour Profile: Mild caramel like honey with a rich and malty flavour.
The Rata Tree can be found hidden in the pristine forests of the West Coast in the South Island of New Zealand, Aotearoa. Sporadically flowering means this precious honey is in limited quantities, as it is only expected to flower every two to three years. When in flower, the Rata tree produces the most spectacular red nettle flower. The irregularity of supply is offset by the belief of honey connoisseurs that it is one of the finest honeys found in the world. This rare honey is spectacularly smooth but not sweet. Flavour Profile: Distinctly sweet, with a fruity and slightly salty flavour.
Kamahi Honey is produced from the stunning white bottle bush Kamahi tree. Bees collect pollen to produce an intense and complex flavour with glorious after tones. Most of Kamahi Honey is produced in the beautiful native forest canopies of the West Coast in the South Island. Here the New Zealand native Kamahi trees grow in abundance. Unlike our other honeys, Honeydew (also known as Beech Honey or Forest Dew Honey) is collected from Black Beech trees, located in the Alpine forest of the South Island of New Zealand. This honey is uniquely made, firstly small insects deep within the beech forest produce sticky liquid collected on Black Beech trees. Honeybees then search these remote forests for the New Zealand native tree and collect its nectar. Flavour Profile: Robust, complex and dramatic with a tangy, toasty woody and sweet flavour.
